How to Make the Perfect Maharashtrian Sabudana Khichdi
Give the sabudana four to six hours to soak. Sauté chopped potatoes in ghee, then add cumin, peanuts, and green chilies. When the sabudana is translucent and sticky, stir in the soaked part and cook over low heat. Toss with yogurt, salad, and lemon wedges, and garnish with coriander leaves. Serve warm.
